Do I have to sign the mortgage or the chattle even though I am not an owner of the property?

My husband and I have a second home/cabin. The property is only deeded to my husband along with the manufactured home that sits on the property. We are jointly taking out a loan on this property, but do I have to sign the mortgage or the chattle even though I am not an owner of the property?

If your name is on the mortgage, then yes you will have to sign the mortgage documents. Signing a mortgage identifies you as personally responsible for the debt. Depending on your state laws, marriage often legally entitles you to a share of any property owned by your husband. This is another reason why a lender would be able to put you on the mortgage.
