The short answer is yes, you can remove someone else and add another borrower, however it will depend on the mortgage product and program you are applying for as to whether it will be allowed or not. The documentation and qualification requirements may also be different depending on the mortgage product.
The easiest transaction for you will probably be a full blown refinance application as opposed to a HARP or a streamline, even if you may otherwise be eligible.
